A stunning twist on classic Eggs Benedict featuring tender Bay Lobster and a spicy Cajun Hollandaise sauce.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 English muffins, halved and toasted
  • Arugula or spinach for topping
  • 8 eggs (for poaching)
  • 1 tablespoon white vinegar (for poaching water)
  • 8 pieces of Bay Lobster
  • 3 egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon Cajun seasoning
  • A pinch of cayenne pepper
  • Salt to taste
  • Chopped chives for garnish
  • Paprika or cayenne pepper for garnish
  • Microgreens for garnish (optional)

Instructions

  1. Prepare the lobsters: Rinse the lobster pieces under cold water. Cut the shell lengthwise with kitchen scissors. Gently remove the meat and lift it through the cut to butterfly the tail.
  2. Cook the lobsters: Bring a large pot of salted water to a boil and add the lobster pieces. Cook for about 1 minute per ounce of lobster, until the shells are bright red and the meat is opaque. Remove from the water and let cool slightly, then cut each tail into medallions. Set aside.
  3. Make the Hollandaise: Add egg yolks and lemon juice to a blender. Blend until light in color. Gradually drizzle in the melted butter while blending until thick and creamy. Add Cajun seasoning, cayenne pepper, and salt. Blend until well mixed. Keep warm.
  4. Poach the eggs: Bring a pot of water to a gentle simmer and add white vinegar. Crack each egg into a small bowl and gently slip them into the simmering water. Cook for 3 to 4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.
  5. Assemble: Place a layer of arugula or spinach on each muffin half. Top with lobster slices, followed by a poached egg.
  6. Serve: Drizzle the warm Cajun Hollandaise over each egg. Garnish with chopped chives, paprika or cayenne pepper, and microgreens if using.

Notes

For best results, gradually incorporate the melted butter into the Hollandaise to prevent it from curdling. Keep the sauce warm until ready to serve.
