Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 8 tablespoons cold butter, cubed
  • 2 cups shredded cheddar or pepper jack cheese
  • 1 egg, lightly beaten
  • 2-3 fresh jalapeño peppers, finely chopped

Instructions

  1. Combine the flour and salt in a mixing bowl.
  2. Add the cold, cubed butter and mix until crumbly.
  3. Incorporate the beaten egg and mix well.
  4. Fold in the cheese and chopped jalapeños.
  5. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 60 minutes.
  6. Preheat the oven to 400°F (200°C).
  7. Roll the chilled dough into 1-inch balls and place on a baking sheet.
  8. Flatten each ball with the bottom of a glass.

Notes

Store biscuits in an airtight container at room temperature for a few days or freeze for up to three months. For extra flavor, try different cheeses or add a pinch of garlic powder.
