Ingredients
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- 8 tablespoons cold butter, cubed
- 2 cups shredded cheddar or pepper jack cheese
- 1 egg, lightly beaten
- 2-3 fresh jalapeño peppers, finely chopped
Instructions
- Combine the flour and salt in a mixing bowl.
- Add the cold, cubed butter and mix until crumbly.
- Incorporate the beaten egg and mix well.
- Fold in the cheese and chopped jalapeños.
- Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 60 minutes.
- Preheat the oven to 400°F (200°C).
- Roll the chilled dough into 1-inch balls and place on a baking sheet.
- Flatten each ball with the bottom of a glass.
Notes
Store biscuits in an airtight container at room temperature for a few days or freeze for up to three months. For extra flavor, try different cheeses or add a pinch of garlic powder.
