Ingredients

  • ½ Teaspoon Salt
  • 8 Tablespoons Cold Butter, diced
  • 2 Cups Shredded Cheddar or Pepper Jack Cheese
  • 1 Egg, lightly beaten
  • 2-3 Fresh Jalapeño Peppers, finely chopped

Instructions

  1. Mix the flour with salt in a mixing bowl.
  2. Add the cold, diced butter to the flour mixture and work it in until crumbly.
  3. Incorporate the lightly beaten egg and mix thoroughly.
  4. Fold in the shredded cheese and chopped jalapeños until combined.
  5. Form the dough into a ball, wrap it in plastic, and refrigerate for at least 60 minutes.
  6. Preheat the oven to 400°F (200°C).
  7. Roll the chilled dough into 1-inch balls and place them on a lined baking sheet.
  8. Flatten each ball gently with the bottom of a glass.
