- 8 Tablespoons Cold Butter, diced

- 1 Egg, lightly beaten

Instructions
- Mix the flour with salt in a mixing bowl.
- Add the cold, diced butter to the flour mixture and work it in until crumbly.
- Incorporate the lightly beaten egg and mix thoroughly.
- Fold in the shredded cheese and chopped jalapeños until combined.
- Form the dough into a ball, wrap it in plastic, and refrigerate for at least 60 minutes.
- Preheat the oven to 400°F (200°C).
- Roll the chilled dough into 1-inch balls and place them on a lined baking sheet.
- Flatten each ball gently with the bottom of a glass.
Notes
Ensure the butter is very cold for the best texture. Experiment with different cheese types for variety.
