A vibrant Argentinian sauce made with fresh herbs and garlic that elevates any meal.

Ingredients

  • 1 cup fresh parsley
  • 1/2 cup fresh mint
  • 4 cloves garlic
  • 1/4 cup red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon serrano pepper, chopped
  • 1/2 teaspoon black pepper
  • 1/2 cup olive oil

Instructions

  1. Add parsley, mint, garlic, vinegar, oregano, salt, serrano pepper, and black pepper to a food processor.
  2. Pulse the mixture until finely chopped.
  3. Slowly drizzle in the olive oil until desired consistency is achieved.
  4. Store the chimichurri in the refrigerator.
  5. To marinate, mix all ingredients in a sealable plastic bag.
  6. Place meat in the bag, seal, and massage the marinade into the meat.
  7. Marinate for 2 to 6 hours in the refrigerator.
  8. Preheat grill to medium heat (about 350°F) and grill meat for 35 to 40 minutes until cooked through.
  9. Serve with a generous portion of chimichurri.

Notes

Let the chimichurri rest for at least 30 minutes before serving for the best flavor.
