A creamy and spicy soul food experience with Cajun-inspired blackened chicken and homemade Alfredo sauce.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 pound chicken breast, raw
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ¼ to 1 teaspoon cayenne pepper (to taste)
  • 8 ounces (approx. 227g) fettuccine pasta
  • 2 tablespoons butter
  • ½ tablespoon minced garlic
  • 2 wedges Laughing Cow cheese
  • 1 ⅓ cups (approx. 320ml) whole milk
  • 2 ounces (approx. 56g) cream cheese (room temperature)
  • ½ cup (approx. 56g) grated Parmesan cheese
  • Freshly ground black pepper (to taste)

Instructions

  1. Prepare chicken: Mix the blackening spices (paprika, garlic powder, salt, pepper, cayenne) in a bowl. Cut chicken breast into strips and coat it in the spice mixture.
  2. Cook chicken: Heat a large skillet with nonstick spray or some oil. Cook chicken for 4–5 minutes per side until cooked through and has a dark crust.
  3. Cook pasta: Boil fettuccine according to package instructions until al dente.
  4. Make Alfredo sauce: Melt butter over medium heat in a skillet and add minced garlic. Lower heat, add Laughing Cow cheese, whole milk, and cream cheese; stir and mash until smooth. Mix in Parmesan and black pepper, allowing sauce to thicken.
  5. Combine everything: Add cooked pasta and blackened chicken into the sauce, mixing well to coat each bite.

Notes

Make sure cream cheese is at room temperature for a smooth sauce. For added flavor, save a bit of pasta water for adjusting sauce consistency.
