  • Total Time: 255 minutes
  • Yield: 12 servings 1x

Ingredients

Scale
  • 1 (225g) pack soft cream cheese
  • 250ml heavy whipped cream, stiffly beaten
  • 180g granulated sugar
  • 1 (570g) can crushed pineapple, drained
  • 1 (280g) package frozen strawberries or raspberries, slightly thawed and chopped
  • 1 (310g) can mandarin oranges, drained
  • 60g chopped pecans
  • 80g maraschino cherries, halved
  • 2 ripe bananas, sliced
  • Juice of 1 lemon

Instructions

  1. Start by mixing the cream cheese and sugar in a large bowl until smooth.
  2. Fold in the whipped cream gently to keep the mixture light and airy.
  3. Add the pineapple, strawberries (or raspberries), and mandarin oranges and mix to distribute the fruits evenly.
  4. Stir in the chopped pecans and maraschino cherries for a subtle crunch and a splash of color.
  5. Toss the banana slices with lemon juice to prevent browning, then fold them gently into the salad.
  6. Pour the mixture into a 23×33 cm dish, cover, and freeze for at least 240 minutes until firm.
  7. Let the salad sit at room temperature for 10-15 minutes before cutting into squares and serving.

Notes

For a healthier option, substitute cream cheese with Neufchâtel cheese and heavy whipped cream with a light whipped cream or a vegan alternative. Can be stored in the freezer for up to 3 months.
