  • 2 tbsp (30g) Unsalted butter
  • 1 tbsp (15ml) Fresh thyme, finely chopped
  • 2 cups (200g) Fresh cranberries
  • 1/4 cup (50g) Brown sugar
  • 1 cup (240ml) Apple juice

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  4. Flip the fillets and cook for another 3-4 minutes until fully cooked.
  5. Remove the salmon fillets from the skillet and place them on a plate.
  6. Reduce the heat to low and melt the butter in the skillet.
  7. Add the fresh thyme and let it become aromatic for about 1 minute.
  8. Add the fresh cranberries, brown sugar, apple juice, red wine, and cinnamon.
  9. Let the cranberry sauce simmer for about 10-15 minutes until it reaches a thick consistency.
  10. Return the salmon fillets to the skillet and coat them in the cranberry sauce.
  11. Serve the salmon fillets on individual plates with a generous portion of the cranberry sauce.

Notes

For a vegetarian or vegan version, replace salmon with tofu or tempeh and serve the cranberry sauce as a side dish. Add chili peppers for extra heat.
