A delicious and colorful medley of roasted vegetables, perfect for any meal.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 250 g waxy potatoes, peeled and diced into 2 cm cubes
  • 2 medium carrots (approx. 200 g), sliced at an angle into 1 cm rounds
  • 1 small head of broccoli (approx. 50 g), florets separated from the stem
  • 1 red onion (approx. 90 g), cut into wedges
  • 1 red bell pepper, roughly chopped
  • 1 small zucchini, halved and sliced into 1 cm half moons
  • 3 tbsp extra virgin olive oil
  • 1 tsp cornstarch
  • 1½ tsp dried Italian herbs (rosemary, thyme, oregano)
  • ½ tsp garlic granules
  • ½ tsp sweet paprika
  • ½ tsp coarse sea salt + more to taste
  • ¼ tsp freshly ground black pepper
  • Optional: Juice and zest of ½ untreated organic lemon

Instructions

  1. Preheat the oven to 220°C (428°F). Line a large baking sheet with parchment paper.
  2. Steam the carrots and potatoes in a steaming basket for 4 minutes or blanch in salted water to pre-cook.
  3. In a large bowl, whisk together olive oil, cornstarch, 1 tbsp water, and all dried spices until a milky-yellow emulsion forms.
  4. Add the pre-cooked potatoes and carrots to the bowl, tossing until evenly coated, then spread them on the baking sheet.
  5. Roast for 10 minutes in the oven.
  6. Prepare the broccoli, bell pepper, zucchini, and onion in the meantime. Add them to the same bowl and mix with the remaining oil mixture.
  7. After the first 10 minutes, remove the baking sheet and toss the hardened vegetables. Place the onions and broccoli in the center, then scatter the bell pepper and zucchini around.
  8. Reduce oven temperature to 200°C (392°F) and roast for another 12-15 minutes until edges are dark brown.
  9. In the last 2 minutes, slightly open the oven door to let moisture escape.
  10. Remove from the oven, immediately sprinkle lemon zest over the hot vegetables, add a squeeze of lemon juice, and finish with fresh thyme or parsley.
  11. Serve on warmed plates, topping with additional coarse salt and pepper if desired.
