A hearty vegetable soup that combines layering flavors, precise cooking times, and contrasting textures for an exceptional dish.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 3 tbsp cold-pressed olive oil
  • 1 tbsp butter (or margarine for vegan version)
  • 2 large carrots (≈220 g), diced
  • 3 stalks celery (≈180 g), sliced
  • 1 large yellow onion (≈200 g)
  • 2 garlic cloves, finely chopped
  • 1 small leek (white part)
  • 1.3 liters clear chicken or vegetable broth (warm)
  • 400 g peeled tomatoes (organic) plus juice
  • 400 g starchy potatoes, diced (1 cm)
  • 150 g green beans, cut into 2 cm pieces
  • 150 g corn (fresh or frozen)
  • 120 g peas (frozen)
  • 2 bay leaves
  • 1 tsp dried thyme or 3 sprigs fresh
  • ½ tsp smoked paprika
  • 1 large pinch nutmeg
  • 1 tsp coarse sea salt (to taste)
  • ½ tsp freshly ground black pepper
  • 1 bunch flat-leaf parsley, stems and leaves separated
  • Juice of ½ organic lemon
  • 2 tbsp caraway seeds (optional)

Instructions

  1. Prepare all ingredients: Wash, peel, and dice vegetables, wash herbs and strip leaves.
  2. Heat a large pot (min. 4 liters) on medium heat, add olive oil and butter, wait until the butter sizzles.
  3. Add onions, carrots, and celery; sauté for 4 minutes until the first golden color appears.
  4. Add garlic and leek; sauté for 30 seconds to prevent garlic from burning.
  5. Add tomato paste, caramelize for 1 minute; remember to stir.
  6. Deglaze with 200 ml broth; scrape up any bits stuck to the pot.
  7. Add the remaining broth, peeled tomatoes and juice, potatoes, bay leaves, thyme, paprika, nutmeg, salt, and pepper.
  8. Bring to a boil, then reduce heat (2/9), cover partially, and simmer for 12 minutes.
  9. Stir in green beans, simmer for another 7 minutes.
  10. Add peas and corn; just 5 more minutes to keep their texture.
  11. Remove the pot from heat, take out bay leaves, and stir in lemon juice.
  12. Optional: Blend 30% of the soup with an immersion blender and return it for natural thickness without flour.
  13. Garnish with parsley leaves, drizzle with good olive oil, and serve!
