Ingredients
- 2 Eggs
- 2 Cooked Lobster Tails
- 2 Slices of Toast
- 1 tablespoon Butter
- For the Cajun Hollandaise:
- 2 Egg Yolks
- 3 tablespoons Water
- 120 g Butter
- 1 teaspoon Cajun Spice
- 1 teaspoon Lemon Juice
- Salt to taste
Instructions
- Melt the butter in a pot until liquid, then set aside to cool slightly.
- Mix the egg yolks with water in a small bowl using a whisk.
- Slowly add the melted butter while whisking to achieve a creamy consistency.
- Season the mixture with Cajun spice, lemon juice, and salt to taste.
- Boil water in a pot and add a pinch of salt.
- Crack an egg into a bowl and gently slide it into the water.
- Cook the egg for 3-4 minutes until the white is set but the yolk is soft.
- Remove the egg and let it drain on a paper towel.
- Toast the bread slices in a pan with butter until golden brown.
- Break the lobster tails into pieces if necessary.
- Assemble by placing the lobster on the toasted bread.
- Top with the poached egg.
- Drizzle Cajun Hollandaise over the egg and garnish with herbs or lemon juice.
